Puff Pastry Envelopes with Jam

There’s nothing quite like the flaky, buttery layers of puff pastry filled with sweet jam and topped with a dusting of sugar. Puff pastry envelopes are a simple yet elegant treat, perfect for breakfast, dessert, or an afternoon snack. Best of all, they require just a few ingredients and minimal effort.

Practical Tips & Recipe Notes!

  1. Keep it in the fridge: Keep the puff pastry cold before baking to ensure it rises properly.
  2. Extra toppings: If you like extra texture, you can sprinkle some slivered almonds or crushed nuts on top before baking.
  3. Experiment: Experiment with different jam flavors or even try a chocolate spread for variety.

📖 Recipe

Prep time: 45 minutes

Cook time: 15 minutes

Total time: 60 minutes

Servings: 12 pieces

Ingredients

Gingerbread Cookie Base:

  • 1 sheet store-bought puff pastry
  • jam

Additionally:

  • 1 egg (beaten) to make egg wash
  • raw or Demerara sugar to sprinkle
  • flour (for dusting the work surface)

Instructions

  1. Preheat the oven to 220°C.
  2. Lightly flour your work surface and roll out the puff pastry sheet to smooth out any creases.
  3. If it’s already pre-rolled, you can use it as is.
  4. Using a sharp knife or a pizza cutter, cut the pastry into equal squares.
  5. Place about a teaspoon of jam in the center of each square.
  6. Be careful not to overfill, as too much jam can cause leaks during baking.
  7. To form the envelope shape, fold all corners to the center, pinch them together and twist to create a seal.
  8. Gently press to seal the edges.
  9. If needed, use a little water to help the pastry stick.
  10. Beat the egg in a small bowl and brush it lightly over the top of each pastry.
  11. Sprinkle granulated sugar on top for added sweetness and a golden-brown finish.
  12. Line a baking sheet with parchment paper and arrange the pastries, leaving space between them.
  13. Bake for 15-20 minutes or until golden brown and puffed up.
  14. Allow the pastries to cool slightly before transferring them to a wire rack
  15. For an extra touch, dust them with powdered sugar before serving.
