Crepes are a classic French dish that are incredibly versatile, making them perfect for breakfast, brunch, dessert, or even a savory meal. Unlike thick, fluffy pancakes, crepes are thin and delicate, with a soft yet slightly crispy edge. The best part? They require only a few simple ingredients and are easy to master with a little practice.

- Warm up eggs: If you can, let your eggs come to room temperature before mixing them into the batter. This allows for smoother incorporation, resulting in a fluffier texture.
- Make ahead of time: Make the batter the night before to enjoy fluffy crepes for the breakfast!
- Keep warm as you cook: I find keeping them in a warm oven the entire time you’re cooking the rest quickly dries them out.
- Don’t wait with flipping: Don’t wait too long to flip crepes or else they will taste rubbery.

Ingredients
- 45g unsalted butter
- 125g all-purpose flour
- 1 tbsp granulated sugar
- ⅛ tsp salt
- 180ml whole milk, at room temperature
- 120ml water, at room temperature
- 2 large eggs, at room temperature
- 1½ tsp vanilla extract
Instructions
- Melt the butter and cool it for about 5 minutes.
- Combine the cooled melted butter, flour, sugar, salt, milk, water, eggs, and vanilla in a blender until the mixture will be silky-smooth and the consistency of a cream.
- Pour into a medium bowl and cover tightly.
- Chill in the refrigerator for at least 30 minutes (up to 1 day).
- Heat up the pan over medium heat.
- Take out the batter from the fridge and quickly stir before cooking.
- Pour not full ladle of batter into the center of the pan.
- Tilt/twirl the pan so the batter stretches as far as it will go. The thinner the crepe, the better the texture.
- Cook for about 2 minutes (until the pancake can easily move around on the pan) and flip as soon as the bottom is set.
- Cook the other side until set.
- Transfer the cooked crepe to a large plate.
- The radiant heat from each crepe piled on top of one another keeps them all warm as you cook the remaining batter.
- Repeat with the remaining batter!
- Place a few spoonfuls of your filling ingredient(s) in the center of the crepe.
- Fold both sides over the filling.
