Ingredients

  • 80ml water
  • 1½ tsp cornstarch (or potato starch)
  • 15ml (about 1tbs) lemon juice (freshly squeezed)
  • 280g Blueberries
  • 25g sugar
  • 1½ tsp vanilla extract

Instructions

  1. In a small bowl, whisk together the cornstarch, water, and lemon juice until the cornstarch fully dissolves. (A fork works well for this—quick and easy.) Set aside.
  2. In a small saucepan over medium heat, combine the blueberries and sugar. Stir continuously for about 3 minutes, gently pressing the berries against the sides of the pan to release their juices.
    • If using frozen blueberries, they will break down more easily as they heat, requiring less mashing.
  3. After about 3 minutes, add the cornstarch mixture and continue stirring for another 2–3 minutes, mashing additional berries if needed. The sauce will begin to thicken.
  4. Remove from heat and stir in the vanilla.
  5. Let cool—the mixture will be slightly runny at first but will thicken significantly as it cools.
  6. Serve warm if preferred, or refrigerate for up to a week.

Storing

Store leftovers in an airtight container in the fridge for up to a week. If the sauce thickens too much after chilling, simply microwave it for 15 seconds or gently reheat it on the stove to loosen it.
