Ingredients

  • 2 pears (about 320g)
  • 200g unsalted butter
  • 200g dark chocolate
  • 20g cocoa powder
  • 80g plain flour
  • 3 large eggs
  • 250g light brown sugar
  • a pinch of sea salt 
  • 20g nuts of your choice (optional)

Instructions

  1. Preheat the oven to 170°C.
  2. Prepare the pear filling – Quarter the pears lengthwise.
  3. Beat the eggs and sugar until thick and creamy (approximately 5 minutes).
  4. Place a mixing bowl on top of a small saucepan filled about a quarter full with hot water, ensuring the bowl rests on the rim of the pan without touching the water.
  5. Combine the butter and chocolate in the bowl, then heat until melted, stirring occasionally.
  6. Mix the chocolate mixture with the egg mixture.
  7. Add nuts of your choice!
  8. Stir in the flour and cacao until well combined.
  9. Pour the batter into a lined 20 cm x 20 cm square cake tin, top with the pears and nuts.
  10. Bake for 40–45 minutes.
  11. Allow to cool completely before cutting.
