Ingredients
- 250g plain flour
- 40g brown sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 2 tsp pumpkin pie spice blend
- ½ tsp fine sea salt
- 230g pure pumpkin purée (see my recipe here!)
- 400 ml whole milk
- 1 large egg
- 30ml vegetable oil
Recipe
- In a medium bowl, combine the flour, baking powder, baking soda, pumpkin spice mix, and salt by whisking.
- In another medium bowl, whisk together the pumpkin purée, brown sugar, milk, egg, and oil until smooth.
- Gradually add the flour mixture to the pumpkin mixture while stirring until combined.
- Avoid overmixing the batter – a few small lumps are acceptable.
- Lightly coat the frying pan with oil or melted butter.
- Use a ¼ cup measuring cup to pour batter onto the frying pan and gently spread it into a circle.
- Flip the pancake when the edges appear dry and bubbles form and pop on the surface.
- After flipping, cook for another 1 to 2 minutes, or until it is lightly browned and cooked through.
- Serve right away with warm syrup and butter.
