About the Recipe

If you're looking for a quick and delicious treat that’s perfect for breakfast, dessert, or an afternoon snack, sugary cinnamon Palmiers are the answer. These crispy, golden delights are coated in cinnamon sugar and are irresistibly addictive. Best of all, they're easy to make with simple ingredients you probably already have in your pantry.

Ingredients

  • 250g puff pastry (1 sheet)

  • 70g granulated sugar

  • 2,5 tsp cinnamon

Preparation

Step 1

  • Preheat the oven to 200 °C.

  • Mix the sugar and cinnamon in a small bowl.

  • Divide the mixture into 3 parts: 2 very large and 1 very small.


Step 2

  • Spread the first large portion of cinnamon sugar on the counter or a rolling mat (approximately the size of your puff pastry sheet).

  • Place the puff pastry sheet on top.


Step 3

  • Sprinkle the puff pastry with the second large portion of cinnamon sugar.

  • Roll it slightly into a rectangle (roll the longer side of the dough toward the centre, then roll the other side toward the centre).


Step 4

  • Cut the log into approximately 1 cm slices using a sharp knife.

  • Dip each side of the cookie into the reserved cinnamon sugar mixture.

  • Place the cookies on a parchment-lined sheet pan, at least 5 cm apart, to allow them to expand.

  • Lightly press the cookies to ensure even thickness.

  • If the oven is still heating, put the sheet pan with cookies in the fridge.


Step 5

  • Bake the cookies for 10 minutes, then turn them over and bake for an additional 5–6 minutes, or until golden.

  • Allow the cookies to cool on the baking sheet.


While Palmiers are baking watch them closely, as they can quickly go from golden brown to burnt. Once they're golden, they're ready!

  1. Use cold puff pastry: Cold dough is easier to work with and helps the twists hold their shape during baking.

  2. Get creative: Add a sprinkle of nutmeg or cardamom to the cinnamon sugar for a unique flavour twist.

  3. Double the batch: These twists disappear quickly, so consider making an extra batch if you're serving a crowd.
